INGREDIENTS
2 Tablespoons olive oil
1 medium zucchini, halved and thinly sliced
1/2 onion, sliced
1/2 small jicama, cut into small thin slices
8 ounces tofu, diced
2 cups cooked brown rice
2 Tablespoons tamari
1 Tablespoon each honey and hot sauce
DIRECTIONS
Heat pan, add oil, veggies and tofu. Stir
fry over medium heat until veggies are softened.
Add rice and flavorings. Stir continuously
until hot.
Taste and adjust seasonings.
Serve hot.
Refrigerate leftovers.
